Crown Pork Roast
Crown Pork Roast is an easy dinner. Made with 8 lb. pork roast, zest of 1 orange, 1 garlic clove, 3 to 4 tbsp. rosemary and 1 1/2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Heat oven to 425°. Position rack in lower half of oven.
Season with salt and pepper.
Brush meat with 4 tablespoons olive oil.
Place meat in heavy-duty roasting pan with rack (large enough not to crowd sides).
Roast 15 minutes.
Reduce heat after 45 minutes until meat is well browned and meat thermometer registers 170° to 180° (about 1 1/2 to 2 hours).
Spread season mixture over meat (inside and out).
