Crisp Sweet Pickles
Crisp Sweet Pickles is an easy dinner. Made with 8 to 12 medium size cucumbers (these should be freshly picked), 4 c. vinegar, 5 tsp. salt, 8 c. sugar and 1 tbsp. pickling spice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place cucumbers in deep crockery pot and pour boiling water over them each day for 4 days.
On the 5th day, slice cucumbers into chunks.
Mix the vinegar, salt, sugar and spices, keeping the solution cold.
Pour over cucumber chunks and let stand 2 days. On 3rd day, pour vinegar solution into large saucepan and heat. Do not let it boil.
Pack pickles into jars and pour hot solution over them to fill jars; seal.
