Creole Okra
Creole Okra is an moderately easy dinner. Made with 3 slices bacon, diced, 1/2 c. chopped onion, 1/2 c. green pepper, 1 c. sliced okra and 1 fresh tomato, peeled and chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute bacon until crisp.
Drain off all fat except 2 tablespoons.
Add onion, green pepper and okra.
Cook until vegetables are tender-crisp.
Stir in rice, broth, salt and red pepper.
Bring to a boil.
Reduce heat, cover and simmer 15 minutes.
Add tomatoes and fluff lightly.
Replace lid and let set about 15 minutes before serving.
Yields 6 servings.
