Cranberry Salad
Cranberry Salad is an moderately easy dinner. Made with 1 c. sugar, 1 c. water, 1 (6 oz.) pkg. lemon flavored gelatin, 4 c. fresh cranberries, ground and 2 large unpeeled apples, cored and ground, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a saucepan, bring sugar and water to a boil, stirring constantly.
Remove from the heat.
Immediately stir in gelatin until dissolved.
Chill until mixture is the consistency of unbeaten egg whites.
Fold in the cranberries, apples, oranges and pecans.
Spoon into oiled individual salad molds, a 6 1/2-cup ring mold or an 11 x 7 x 2-inch dish.
Chill until firm.
If desired, serve on lettuce leaves and top with a dollop of mayonnaise. Yields 12 to 15 servings.
