Cranberry Salad
Cranberry Salad is an moderately easy dinner. Made with 2 oranges, 2 1/2 c. fresh cranberries, 3 (3 oz.) pkg. orange jello, 3 c. boiling water and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel oranges.
Put peeling and cranberries through food grinder.
Dissolve gelatin in boiling water.
Add lemon juice, sugar and salt.
Stir until sugar is dissolved.
Add orange sections, cranberry mixture, celery, pineapple and pecans; mix well.
Pour into a 10-cup mold; chill until set.
Yields 12 to 15 servings.
Make 2 days before serving.
