Cranberry Pumpkin Bread
Cranberry Pumpkin Bread is an moderately easy dinner. Made with 2 beaten eggs, 2 c. sugar, 1/2 c. oil, 1 c. pumpkin and 2 1/4 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine eggs, sugar and oil, then the pumpkin.
Mix well. Combine flour, spice, soda and salt in a large bowl.
Make a well in the center.
Pour pumpkin mixture into the well.
Mix just until dry ingredients are moist.
Stir in cranberries.
Spoon batter into two 8 x 3 x 3-inch greased baking pans.
Bake 1 hour at 350Β° or until tester comes out clean.
