Crabmeat Coquille
Crabmeat Coquille is an moderately easy dinner. Made with 3 tbsp. butter, 2 tbsp. chopped onions, 1 1/2 lb. crabmeat (imitation may be substituted), 1/2 lb. fresh mushrooms, washed and sliced and 2 c. light fish stock (hot), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt 1 tablespoon butter in saucepan.
Add onions.
Cover and cook 3 minutes over low heat.
Add crabmeat and mushrooms.
Season to taste.
Cover and cook 2 to 3 minutes.
Add fish stock.
Cook 2 to 3 minutes.
Then remove crabmeat and mushrooms and set aside. Reserve cooking liquid.
