Country Captain Chicken
Country Captain Chicken is an impressive dinner. Made with 2 1/2 or 3 lb. chicken, 2 tbsp. fat, 2 tbsp. crisco, 1 onion, sliced thin and 1 green pepper, sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cut up and brown chicken in fat and put aside.
Using a clean pan, brown onions, pepper and garlic in bread.
Add tomatoes and seasonings; cook for 10 minutes.
Place chicken in casserole and pour in sauce, adding fat in which chicken was browned.
Cover with brown paper and lid; bake in a 350Β° oven for 45 minutes. When ready to serve, add blanched and browned almonds and well-washed currants.
Serve with rice.
Serves 4 or 5.
