Cornmeal Biscuits
Cornmeal Biscuits is an moderately easy dinner. Made with 1 1/2 c. all-purpose flour, 3/4 c. yellow cornmeal, 2 tbsp. sugar, 2 tbsp. plus 1 tsp. baking powder and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 400Β°.
Grease baking sheet; set aside.
In medium bowl, combine all-purpose flour, cornmeal, sugar, baking powder and salt.
With pastry blender or 2 knives, cut in vegetable shortening until coarse crumbs.
Stir in enough scalded milk to make a soft dough.
On floured surface, knead dough for 1 to 2 minutes until just smooth.
Roll out into 1/4-inch thick rectangle.
Cut into 12 equal squares.
Place on prepared baking sheet.
Bake 10 to 15 minutes until lightly browned.
Serve warm. Makes 12 biscuits.
