Cornbread
Cornbread is an moderately easy dinner. Made with 2 tbsp. shortening, 1/4 c. sugar, 1 egg yolk, beaten, 3/4 c. cornmeal and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 425Β°.
Using a No. 9 cast-iron skillet, melt 1 tablespoon shortening as oven heats.
Cream remaining 1 tablespoon shortening; add sugar.
Cream until light and fluffy.
Add beaten egg yolk.
Sift cornmeal, flour, soda, baking powder and salt together and add to egg mixture alternately with sour milk.
Last fold in egg white beaten stiff.
Turn into hot cast-iron skillet and bake for 20 minutes, or until inserted toothpick comes out clean.
