Corn Fritters
Corn Fritters is an moderately easy dinner. Made with 3 to 4 large ears corn, 3 tbsp. flour, 1/4 tsp. salt, freshly ground pepper and 2 eggs, separated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Remove kernels from cobs.
Mix corn and flour.
Blend in salt, pepper and egg yolks.
In a separate bowl, beat egg whites until soft peaks form.
Fold into corn mixture.
Cover bottom of a large skillet with oil.
Heat until a drop of water sizzles. Drop batter by tablespoonfuls into skillet.
When browned on bottom, carefully turn and brown on the other side.
Serve warm.
Makes 4 servings.
