Company Oyster Stew
Company Oyster Stew is an moderately easy dinner. Made with 1 qt. small oysters, 1 small onion, grated, 3/4 c. finely cut celery, 3/4 c. milk and 3/4 c. heavy cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Strain oysters, saving liquid.
Add onion to oysters; heat in liquid until edges curl.
Into a heavy saucepan, put celery and milk; simmer about 3 minutes.
Add cream and butter; bring to the boiling point.
Turn off heat and slowly add oysters.
Add seasonings.
Keep hot, but never let boil from this point.
Serve in hot soup plates with crackers.
