Cold German Potato Salad
Cold German Potato Salad is an moderately easy dinner. Made with 2 to 3 lb. potatoes, cubed and boiled, 1/2 lb. bacon, cut into small bits and cooked until crisp (save bacon grease), 2 stalks celery, chopped, 1/2 large spanish onion, chopped and 8 hard-boiled eggs (save one for garnish), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil potatoes and eggs.
Fry bacon.
Stir hot bacon grease into the chopped onions and celery.
Mix salad dressing, mayonnaise and sugar.
Blend bacon grease mixture and salad dressing mixture.
Mix in the potatoes.
Cut up 7 of the 8 eggs. Mix them in.
This has to be last so the eggs are not crushed too bad.
With the last egg, slice and decorate.
Sprinkle with paprika and parsley; serve.
Serves 8 to 10 people.
