Cold Carrot Soup
Cold Carrot Soup is an moderately easy dinner. Made with 6-8 medium carrots, chopped, 1 small onion, chopped, 1 tbsp. vegetable oil, 3 cups chicken broth (fat removed) and 1 c. low-fat or skim-milk, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In large saucepan or Dutch oven, saute vegetables in oil until onions are clear but not browned.
Add broth and bring to boil.
Reduce heat, cover and simmer until carrots are tender. Remove from heat and purΓ©e in blender.
Add orange juice and chill.
Just before serving, add milk and seasoning.
