Coconut Thumbprint Cookies
Coconut Thumbprint Cookies is an moderately easy dinner. Made with 1/2 c. butter or butter flavored crisco, 1/2 c. sugar, 1 egg, separated, 3/4 c. unsifted all-purpose flour and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Preheat oven to 375°.
Grease baking sheets.
Cream butter with sugar, egg yolk and vanilla.
Combine flour with salt and baking powder.
Add to creamed mixture.
Blend well and form into bars about 1-inch in diameter.
Beat egg white until slightly frothy.
Dip dough balls into egg white, then roll in coconut. Place on greased baking sheets.
Make a "thumbprint" in the center of each cookie and spoon 1/2 teaspoon of preserves into each. Bake at 375° for 8 to 9 minutes or until coconut begins to brown. Yields 2 dozen cookies.
