Coconut Cake
Coconut Cake is an moderately easy dinner. Made with 3 c. all-purpose flour, 1 c. butter or 1/2 c. butter and 1/2 c. margarine, 1 c. fresh grated coconut, 1 c. coconut milk and 4 well beaten egg yolks, this recipe delivers authentic, satisfying flavors. Sift flour with baking powder and salt 3 times.
Cream butter and sugar thoroughly until light and fluffy.
Add egg yolks and beat well.
Add flour and coconut milk alternately, a small amount at a time, beating after each addition until smooth.
Add vanilla and coconut.
Fold in egg whites that have been beaten.
Bake in 3 large cake pans at 350Β° for about 30 to 35 minutes.
Spread with Seven Minute Icing; sprinkle with fresh grated coconut.
