Chow Mein
Chow Mein is an impressive dinner. Made with 3/4 lb. veal steak, 3/4 lb. lean pork, 2 tbsp. oil, 1 c. onion, sliced and 3 c. celery, cut in diagonal strips, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut meat into thin strips; brown lightly in oil.
Add onion, water and seasonings (including bouillon cubes).
Cover tightly and simmer 20 minutes or until meat is almost tender.
Add celery, bean sprouts and mushrooms. Cook 3 minutes, covered tightly.
Make paste of cornstarch and water.
Stir into meat and vegetable mixture.
Continue to stir gently until mixture is thickened, about 2 minutes.
Serve on Chinese noodles.
Yield: 8 servings. Carbohydrate 15 g, protein 15 g, fat 16 g, calories 264.
One serving = 1 bread starch exchange, 2 meat low-fat exchange, 2 fat exchange.
One-half cup Chinese noodles = 1 bread starch exchange, 1 fat exchange.
