Chocolate Fudge
Chocolate Fudge is an moderately easy dinner. Made with 2 (1 oz.) sq. unsweetened chocolate, grated, 2/3 c. milk, scalded, 2 c. sugar, 1 tbsp. light corn syrup and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt chocolate in milk.
Add sugar and corn syrup.
Cook slowly, stirring until sugar dissolves.
Bring to boiling; cover and cook 3 minutes.
Uncover and cook to soft ball stage (236°), stirring frequently.
Remove from heat; add butter and cool to lukewarm (110°) without stirring.
Add vanilla and beat vigorously until very thick and no longer glossy.
Quickly spread in a greased pan.
When firm, cut in squares.
Makes 2 dozen pieces.
