Chicken with Lemon
Chicken With Lemon is an moderately easy dinner. Made with 2 (1 3/4 lb.) chickens, cut into serving pieces, salt and pepper to taste, 3 tbsp. butter or oil, 1/4 c. chopped shallots and 1 or 2 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. Sprinkle chicken pieces with pepper and salt to taste.
Melt butter (or oil) in a skillet and brown the chicken, skin side down.
When golden, turn the pieces and brown other side. Sprinkle with shallots and parsley.
Arrange lemon slices over the chicken.
Cover and cook 5 minutes.
Pour off fat and add wine. Cover and cook 15 minutes or until tender.
Serve with juices and fluffy rice.
