Chicken with Dried Beef
Chicken With Dried Beef is an moderately easy dinner. Made with 3 whole chicken breasts, 1 (3 oz.) pkg. dried beef (bought in wafer thin slices), 6 strips lean bacon, 1/2 lb. fresh mushrooms or 1 (8 oz.) can sliced mushrooms (optional) and 1 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Bone chicken breasts and cut in half; set aside.
Arrange dried beef in shallow baking pan large enough to hold chicken in 1 layer.
Wrap a strip of bacon around each breast half; arrange over beef.
Saute mushrooms in butter and spread over chicken. Combine soup and sherry and mix until smooth; pour over chicken. Cover baking pan with aluminum foil and bake chicken at 300° for 2 hours.
Uncover; increase heat to 350° and bake for an additional 20 to 30 minutes, basting several times.
