Chicken Tetrazzini
Chicken Tetrazzini is an moderately easy dinner. Made with 1/2 lb. vermicelli, 1/2 lb. mushrooms, sliced, 6 tbsp. butter, 2 tbsp. flour and 2 c. chicken broth, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute mushrooms and onion in 3 tablespoons butter.
Set aside. Melt remaining butter; add flour and stir.
Add broth and cook until thickened.
Add spices, cream and sherry and cook for 10 minutes.
Cook vermicelli and drain.
Mix half of sauce with vermicelli and mushrooms.
Put into greased casserole.
Sprinkle with olives and chicken.
Pour remaining sauce over top and sprinkle with cheese.
Bake at 350Β° for 20 to 30 minutes.
