Chicken Stew
Chicken Stew is an moderately easy dinner. Made with 3 to 5 lb. whole chicken, 2 carrots, sliced, 1 lb. mixed vegetables, salt and pepper to season and 4 to 5 potatoes, diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Boil chicken in pot on stove until cooked.
Reserve 3 to 4 cups stock.
Debone and store chicken in refrigerator.
Put potatoes in crock-pot, top with carrots, onions, mixed vegetables, seasonings and top with soup.
After 2 hours, add 3 to 4 cups chicken stock. Mix. Let cook until potatoes and carrots are tender, approximately 8 hours.
About 1 hour before serving, add cut up chicken.
Yields about 4 cups.
