Chicken Saltimbocca
Chicken Saltimbocca is an moderately easy dinner. Made with 3 large chicken breasts, skinned, boned and halved lengthwise, 6 thin slices ham, 3 slices mozzarella cheese, halved, 1/2 tsp. dried sage, crushed and 1/3 c. bread crumbs, this recipe delivers authentic, satisfying flavors. Pound chicken to 5 x 5-inch cutlets.
Place ham slice and cheese slice on each cutlet, cutting to fit.
Top with dash of sage.
Roll up, jelly roll fashion.
Combine bread crumbs, Parmesan and parsley.
Dip chicken in butter, then roll in crumbs.
Place in shallow baking dish and bake at 350Β° for 40 to 45 minutes.
