Chicken Parmigiana
Chicken Parmigiana is an moderately easy dinner. Made with 6 to 8 skinless, boned chicken breasts, 2 eggs, beaten, 1 tsp. salt, 1 tsp. pepper and 3/4 c. progresso italian bread crumbs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Pound chicken breasts to 1/4-inch thick.
Roll them in egg, salt and pepper, then in bread crumbs.
Heat oil to very hot. Brown on both sides.
Remove to shallow baking dish.
Stir in tomato sauce and spices to the oil they were browned in.
Boil for a minute, then simmer 10 minutes until thick.
Add oleo.
Pour over chicken.
Sprinkle with Parmesan cheese.
Bake at 350Β° for 30 minutes.
Uncover.
Put Mozzarella on top.
Bake 10 minutes or until cheese melts.
