Chicken Marsala
Chicken Marsala is an moderately easy dinner. Made with 3 large chicken breasts, split, boned and skinned, 4 tbsp. butter or margarine, 1 clove garlic, crushed, 2 c. sliced mushrooms and 3/4 c. marsala wine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In large skillet, heat butter.
Brown garlic until golden and discard.
Saute chicken breasts in flavored butter until well browned on all sides.
Add mushrooms and Marsala.
Cover and cook 5 to 7 minutes or until chicken is fork-tender.
Remove chicken breasts to warm platter.
Over high heat, heat sauce in skillet to boiling, scraping up any brown bits from the bottom of the pan. Cook until sauce thickens slightly.
Stir in parsley and pour over.
Makes 6 servings.
