Chicken Fricassee
Chicken Fricassee is an moderately easy dinner. Made with 1 (3 1/2 lb. or larger) fryer, cut up, 1/2 c. flour, seasoned, 1/4 c. shortening, 1/2 c. chopped celery and 1/4 c. chopped onion, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Coat chicken with a mixture of the flour to which you have added a teaspoon of salt and 1/2 teaspoon pepper.
Then brown chicken pieces in the hot shortening.
Remove chicken pieces to a 3-quart casserole.
Cook celery and onions in skillet until tender but not brown.
Drain off excess fat; stir in soup, pimento and 3/4 cup water.
Pour over chicken in casserole.
Bake, covered, at 350Β° until tender.
This takes about one hour.
