Chicken Curry In A Hurry is an impressive dinner. Made with 2 tbsp. curry powder, 1 tsp. cumin, 3/4 tsp. salt, 1/4 tsp. fresh ground pepper and pinch of cloves, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine the curry powder, cumin, salt, pepper, cloves, water, garlic and tomato paste in a small bowl.
Stir until blended; set aside.
Heat the oil in a Dutch oven over high heat.
Add the onions and cook, stirring occasionally, until tender, about 3 to 4 minutes.
Add the spice mixture; cook until fragrant, about 1 minute.
Add the chicken, apple, carrots and broth.
Reduce heat and simmer, covered, stirring occasionally, until chicken is cooked and vegetables are tender, about 12 to 14 minutes.
Stir in the peas and heat through.
Serve with cooked rice or couscous. Yield
