Chicken Cordon Bleu
Chicken Cordon Bleu is an moderately easy dinner. Made with 2 large chicken breasts or 4 boneless halves, 4 thin slices ham (red-eye is best), 4 thin slices swiss cheese, 1/4 c. flour and 3/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Remove bones and skin from chicken.
Cut breasts in half. Place chicken between plastic wrap and pound to 1/4 inch thick. Place one slice of ham and one slice of cheese on each piece of chicken.
Roll up carefully and secure with wooden pick.
Mix flour, salt and pepper.
Coat the chicken rolls in flour mixture. Dip chicken roll in beaten egg and roll in bread crumbs.
