Chicken Artichoke Soup
Chicken Artichoke Soup is an moderately easy dinner. Made with 1 lb. boneless chicken breast, cut in 1/2-inch pieces, 1 clove garlic, chopped, 1 (16 oz.) can artichoke hearts, washed and cut in half, 4 tbsp. butter or margarine and 1/2 c. onion, chopped fine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute garlic, onion, thyme and artichoke hearts in butter for 15 minutes over medium heat.
Add water, chicken and bouillon cubes.
Simmer covered over medium heat for 45 minutes.
