Cheesy Santa Fe Corn Muffins
Cheesy Santa Fe Corn Muffins is an moderately easy dinner. Made with 1 c flour, 1 c yellow cornmeal, 2 tbsp sugar, 2 12 tsp baking powder and 3/4 tsp salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a large bowl, combine flour, cornmeal, sugar, baking powder and salt.
In a another medium bowl, stir together buttermilk, oil, eggs and chilies. Add buttermilk mixture to dry ingredients, stir to combine.
Add cheese, stir just until combined.
Spoon batter evenly into prepared muffin cups. Bake in 350 degree oven for 15 to 20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes on a wire rack, serve warm.
