Cheesy Potato Skins
Cheesy Potato Skins is an moderately easy dinner. Made with 3 medium baking potatoes, vegetable oil, seasoned salt, 1 c. (4 oz.) shredded cheddar cheese and 6 slices bacon, cooked and crumbled, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Scrub potatoes thoroughly; rub skins with oil.
Bake at 400° for 1 hour, or until done.
Allow potatoes to cool to touch.
Cut in half lengthwise; carefully scoop out pulp, leaving 1/8 to 1/4-inch shells.
(Pulp may be used for mashed potatoes or served for another recipe.)
Cut shells in half crosswise; deep fry in hot oil (375°) for 2 minutes, or until lightly browned.
Drain on paper towels.
Place skins on a baking sheet; sprinkle with salt, cheese and bacon.
Place under broiler until cheese melts.
Serve with sour cream.
