Cheeseburger Soup
Cheeseburger Soup is an impressive dinner. Made with 1 1/2 lb. ground beef, 3/4 c. onion, chopped, 3/4 c. shredded carrots, 3/4 c. diced celery and 1 tsp. basil, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Brown beef; drain and set aside.
In same pan, sautΓ© onion, carrots, celery, basil and parsley in 1 tablespoon butter until tender, about 10 minutes.
Add broth, potatoes and beef; bring to a boil.
Reduce heat; cover and simmer for 10 to 12 minutes or until potatoes are tender.
Melt remaining butter in small skillet.
Add flour; cook and stir for 3 to 5 minutes or until bubbly.
Add to soup; bring to a boil.
Cook and stir for 2 minutes; reduce heat.
Add cheese, milk, salt and pepper.
Cook until cheese melts.
Remove from heat and blend in sour cream.
