Cheddar Crisps *(From Gourmet Magazine) is an moderately easy dinner. Made with 1 c. unsalted butter, 1/2 lb. sharp cheddar, grated, 2 c. all-purpose flour, cayenne pepper to taste (up to 1/2 tsp.) and 2 c. rice krispies, this recipe delivers authentic, satisfying flavors. Cream butter and Cheddar until light and fluffy.
Continue beating and add flour a little at a time until combined.
Stir in dash of salt and cayenne.
Stir in Rice Krispies.
Form into balls by heaping teaspoonfuls and place 2 inches apart on buttered baking sheets.
Flatten each with back of a floured fork.
Bake in middle of 350Β° oven for 15 minutes or until golden.
Makes approximately 55.
Freezes well.
