Cheddar Cheese Soup
Cheddar Cheese Soup is an moderately easy dinner. Made with 4 tbsp. butter, 2 tbsp. flour, 4 c. rich chicken broth, 1 c. diced sharp cheddar cheese and 1/2 c. each: chopped onion, carrots and celery, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt 2 tablespoons butter in saucepan; stir in flour until lightly brown.
Gradually add broth.
Blend in cheese and stir until melted.
Saute vegetables in remaining butter until translucent; cool slightly and purée in processor or blender. Soup may be made ahead to this point.
At serving time combine cheese mixture with purée and heat gently.
Add cream and seasonings; continue to heat gently and adjust seasoning.
Serves 4 to 6.
