Carrot Cake
Carrot Cake is an impressive dinner. Made with 2 c. sifted all-purpose flour, 2 tsp. baking soda, 1 tsp. baking powder, 1 tsp. salt and 2 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Grease a 13 x 9 x 2-inch baking dish.
Dust lightly with flour.
Sift flour, baking soda, baking powder, salt and cinnamon into a large bowl.
Make a well in center and add in order the sugar, oil, eggs and vanilla; beat with a wooden spoon until smooth.
Stir in carrots, coconut, walnut and pineapple until well blended.
Pour into pan.
Bake in a 350Β° oven for 45 minutes. Cool completely in pan on wire rack.
Can also be baked in a tube pan for 55 to 60 minutes.
Spread with cream cheese frosting or powdered sugar.
