Carmen's Ratatouille
Carmen'S Ratatouille is an moderately easy dinner. Made with 2 medium onions, thinly sliced, 2 garlic cloves, minced, 1/4 c. olive oil, 1 lb. fresh zucchini, sliced and 1 green pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook onion and garlic in oil in large pot.
Saute until light brown.
Add zucchini and green pepper; cook over medium heat 10 minutes.
Add remaining ingredients except macaroni.
Simmer 10 minutes.
Cook macaroni in boiling, salted water for 5 minutes. Add to soup; simmer 5 minutes more.
Serve hot.
Rye breads go very well with this.
