Cantaloupe Soup
Cantaloupe Soup is an moderately easy dinner. Made with 3 c. fresh orange juice, 1/2 c. dry white wine, 1/2 c. honey, 1 tsp. grated orange peel and 1 cinnamon stick, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine orange juice, wine, honey, orange peel and cinnamon stick; bring to a boil.
Simmer for 10 minutes.
Dissolve cornstarch in lemon juice and whisk into simmering liquid.
Keep simmering and whisk until thick and clear.
Remove from heat and remove cinnamon stick.
Chill until cold.
Purée cantaloupe with cream (do in batches) and stir purée into cold juice mixture. Chill until serving time.
Can be frozen.
