Cantaloupe Mousse
Cantaloupe Mousse is an moderately easy dinner. Made with 1/3 ripe medium cantaloupe, 1 pkg. unflavored gelatin, 1/4 c. cold water, 1 c. whipping cream and 2 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

1 cup.
In top of double boiler, sprinkle gelatin over cold water.
Stir until dissolved.
Add melon when cream until soft peaks form.
Whip egg whites until frothy, beat in sugar until stiff peaks form, fold cream egg whites.
Add cantaloupe and gelatin mix.
Pour into serving
Cover and chill 1 hour.
Garnish with mint leaves.
