"Candied" Sweet Potatoes
"Candied" Sweet Potatoes is an moderately easy dinner. Made with 1/2 c. dried apricots, 1/2 c. dark raisins, 1 c. unsweetened apple juice, 4 medium sweet potatoes, scrubbed and trimmed and 1 tbsp. tapioca, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
Wash apricots and soak with raisins in apple juice for 1 hour.
Steam sweet potatoes until tender.
In a small saucepan, combine tapioca with apricots, raisins and juice. Let mixture stand for 5 minutes.
Bring to boil over medium heat; stir often.
Remove from heat.
Add brandy (optional) and cool for 20 minutes.
Cut cooked sweet potatoes into 1/2-inch slices.
Mix with applesauce.
Place this mixture in a 1 1/2-quart dish.
Pour the apricot-raisin sauce over the top.
Bake, uncovered, for 30 minutes.
