Candied Pecans
Candied Pecans is an moderately easy dinner. Made with 4 c. pecans, 1/2 c. sugar, 1/2 tsp. cinnamon, 1/4 tsp. ginger and 1/4 tsp. freshly grated nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cover pecans with water in saucepan; bring to a boil.
Boil 1 minute and drain well.
Mix sugar and spices; set aside.
While pecans are still warm, toss with sugar mixture.
Spread on tray in single layer; let dry, 8 to 24 hours.
Heat oil to 350Β°.
Fry nuts about 2 minutes, until sugar caramelizes and nuts are dark brown. Drain well.
Sprinkle with salt while still warm if desired. Store in airtight container.
Makes 4 cups.
