Caesar Dressing
Caesar Dressing is an moderately easy dinner. Made with 1 egg, coddled for 1 minute, 1 c. olive oil, juice of 1 lemon, 1 clove garlic and 1/4 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Coddle egg for exactly 60 seconds in simmering water.
Place egg in blender; while blending slowly, dribble in half of the oil. Add lemon juice, garlic and cheese.
Add salt and pepper to taste.
Slowly blend in the rest of the oil.
This dressing is best over romaine lettuce, but works well with all salads.
