Cabbage And Carrot Casserole(Low In Calories) is an easy dinner. Made with 1 small head cabbage, 1 large onion, sliced thin and 5 or 6 carrots, grated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Slice cabbage, onion and pepper very thin. Put the cut cabbage in a top of the stove casserole. Put sliced onion over cabbage, then sliced peppers and a tad more salt.
Top with grated carrots. Dot with oleo (I use squeeze oleo because it is easier). Now add 1/2 cup water. Bring to a boil and cook 25 or 30 minutes on very low heat. Be careful and don't let it scorch.
