Butterscotch Oatmeal Cookies
Butterscotch Oatmeal Cookies is an moderately easy dinner. Made with 1 c. i can't believe it's not butter!, 1 3/4 c. firmly packed dark brown sugar, 2 large eggs, 1 tsp. vanilla and 2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. In large bowl, beat margarine and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Add vanilla.
Combine flour, oats, baking soda and salt; add alternately with water to creamed mixture.
Stir in butterscotch morsels and nuts.
Drop by heaping teaspoonfuls onto a lightly greased cookie sheet.
Bake in a preheated 375Β° oven for 8 to 10 minutes until edges are lightly browned.
Yield: about 6 dozen cookies.
