Butternut Squash Casserole
Butternut Squash Casserole is an easy dinner. Made with 2 c. cooked, mashed butternut squash, 3 eggs, 1 c. sugar, 1/4 lb. butter, melted (1 stick) and ginger to taste (about 1/4 to 1/2 tsp.), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bake squash until done, then remove seeds and scrape out pulp.
Put in blender with other ingredients until all is mixed well.
Pour into greased 4 1/2 x 8 1/2-inch casserole dish (loaf pan).
Bake at 350Β° for about 45 minutes or until casserole is set.
