Brunswick Stew
Brunswick Stew is an moderately easy dinner. Made with 4 chicken breasts, skinned and deboned, 2 stalks celery, diced well, 1 c. diced onion, 2 qt. tomatoes (fresh or canned) and 4 medium potatoes, diced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place chicken, celery and onion in a large kettle.
Add a quart of water.
Simmer until meat is tender.
Lift meat from broth and cool.
To the broth, add tomatoes, diced potatoes, meat, beans, corn and sugar.
Simmer slowly, stirring occasionally, for 3 hours.
Makes about 6 quarts.
