Broiled Maryland Crab Cakes
Broiled Maryland Crab Cakes is an moderately easy dinner. Made with 1 lb. crabmeat, 1 c. mayonnaise, 1 egg white, 1/2 tsp. old bay seafood seasoning and 3 to 4 tbsp. fine bread crumbs or cracker crumbs, this recipe delivers authentic, satisfying flavors. Preheat broiler to medium.
Remove shell and cartilage from crabmeat.
Blend mayonnaise, egg white, seasoning and cracker crumbs in bowl.
Add crab and fold gently.
Divide mixture into 8 equal portions.
Shape into patties.
Coat them with crumbs and refrigerate.
Heat butter and turn cakes in it to coat top and bottom.
Broil about 4 inches from flame, about 5 minutes, turning once.
Serve with additional melted butter with crackers on hamburger rolls.
This makes 2 per person.
