Broccoli Carrot Soup
Broccoli Carrot Soup is an moderately easy dinner. Made with 2 c. broccoli flowerets, 1/2 c. shredded carrots, 1/2 c. chopped onions, 1/4 c. water and 1 can creamy potato soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In 3-quart microwave casserole, combine broccoli, carrots, onion and water. Cover and microwave on High for 5 minutes or until vegetables are tender. In small bowl, stir soup until smooth. Stir in milk, cheese and seasonings. Mix well. Stir into veggie mixture. Cover. Microwave on High for 8 minutes or until hot and bubbling, stirring twice during cooking time. Let stand, covered, for 5 minutes.
Makes 4 (1 cup) servings.
