Brazilian Black Beans
Brazilian Black Beans is an moderately easy dinner. Made with 2 to 3 lb. pork shoulder roast, 1 1/2 c. black turtle beans, soaked in water overnight, 1 small onion, finely diced, water added throughout baking to keep soup like and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Preheat oven to 425°.
Salt and pepper roast.
Brown in oven for 30 minutes.
Reduce oven temperature to 325°.
Add beans to roaster with enough water to cover beans.
Season with salt and pepper.
Bake for approximately 2 hours, adding onion, more water and salt and pepper after first hour.
Beans become soft in a soup like broth.
Slice roast and serve beans over hot rice. Serves 6.
