Bran Muffins
Bran Muffins is an moderately easy dinner. Made with 1 c. bran (raw), 1 c. boiling water, 1 c. shortening, 1 c. sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix bran and boiling water.
Beat shortening and sugar.
Add eggs and buttermilk.
Add bran to mixture.
Sift flour, soda and salt; add dry ingredients to mixture until mixed well.
Stir in bran buds and pour into muffin pan. Bake at 400Β° for 12 to 15 minutes.
May be kept in refrigerator for 4 to 6 weeks and baked as needed.
