Boston Baked Beans
Boston Baked Beans is an moderately easy dinner. Made with 2 c. dried pea beans, 6 c. water, 1/4 lb. fat bacon, 1 chopped onion and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cover beans with water.
Boil for 5 minutes.
Cover and let stand for 1 hour.
Simmer until tender.
Add water during cooking if necessary.
Drain beans but save cooking water.
Place beans, onion, salt, pepper, molasses, dry mustard, garlic and brown sugar in Dutch oven.
Mix gently with 2 cups of bean liquid until all ingredients are blended.
Top with slices of bacon.
